Tava Roasted Pork with Potatoes

The tava is the metal or ceramic dish that you put in the oven. This dish, variations of which exist in many parts of the med, is my own version of comfort food when i have worked hard and can't be bothered to spent ages preparing something. You can make this with any meat incl chicken, lamb and with just vegetables or even prawns. The basic ingredients are the meat, potatoes, onions, tomatoes and a bit of Cinnamon. But, you can add other veggies such as paprika or eggplant. The usual method is to place all these ingredients in the greased tava dish add some water, cover and wack in the oven. In this recipe i do the same but once cooked i take the lid off and allow the meat and potatoes to brown a little bit before serving

Falafel

Falafel is a vegetarian Middle_Eastern snack that has become popular street-food around the world; served in a pitta bread and topped with salad and tahini or chilli sauce. It also makes a great snack or appetizer at the dinner table. It's said to have originated in Egypt and is made primarily of chick peas or fava bean deep fried.

 

In the so called Food-War between Israel and Lebanon, Beiruti restaurants recently teamed up to make the largest falafel mix (over 5,000 kg of it) according to the Guiness Book of Records. Over in New York an Israeli chef responded by making a 3ft, 11kg, falafel ball. Imagine the size of the pitta bread! Anyway, make food, not war. Here's a common recipe:







 
Mediterranean Seafood Casserole

Seafood Stew

When its not quite summer, and not quite winter. Here's a seafood stew recipe for a dish that's warming, comforting but not too heavy. As always on Froodies, the emphasis is on creating delicious food that is good for you.

You will need a selection of seafood (fish and shellfish), sweet red pepper, tomatoes and a casserole dish with a lid

 

 

 

 
Flammkuchen - Tarte flambée - Pizza bianca

flammkuchen_cookta1I am living on an island when its 25 degree at Xmas so no wonder I was dreaming about those nice, cold German Xmas markets, the wine AND the Flammkuchen! You can call it pizza bianca or tarte flambée but the key here is the sour cream, the onion and the bacon. 

 

For the dough you will need only flour, salt and water. Nothing else. For the dough I use simple flour but for the dusting and rolling i use whole wheat flour, which makes it more rustic. There are variations with yeast and milk and potato in the dough but I prefer this simple and therefore crispy type of Flammkuchen. You mix the flour with the salt and add as much water as it takes to make a very firm dough that is difficult to roll out. Then its perfect! You can use your noodle machine, makes it easier. Roll the dough untill it is very very thin. Turn on your oven and use the maximum heat without ventilation.

 

Arrange the sour cream, the bacon, the red onion and some red peppers on top and put the Flammkuchen in the oven for about 12-15 minutes, depending on the thickness and the toppings. You can use salami or tomato or whatever you feel like.

 

Its an easy and very fast variation when you dont have time to make pizza or just have unexpected guest. Serve it with a rosé and forget about cutlery, just use your hands :-) Bon appetit!

 


 
Horn Peppers Stuffed with Feta

Peppers stuffed with feta cheese

You'll love these. Quick and simple starter or meze dish from Greece and Cyprus. The Greek name is Piperies yemistes me feta (Peppers stuffed with feta). These long horn peppers (kerata) are very popular for grilling at bbqs because they're sweet and have the great flavour of capsicums: they're not actually spicy hot, just like bell-peppers.

This is a vegetarian dream, the sweetness of the peppers works well with this tangy, salty cheese. Cooking time around 20 minutes so pop round to your local Greek grocer and get some horn peppers and feta and that's more or less what you need.
