Peppers stuffed with feta cheese

You'll love these. Quick and simple starter or meze dish from Greece and Cyprus. The Greek name is Piperies yemistes me feta (Peppers stuffed with feta). These long horn peppers (kerata) are very popular for grilling at bbqs because they're sweet and have the great flavour of capsicums: they're not actually spicy hot, just like bell-peppers.

This is a vegetarian dream, the sweetness of the peppers works well with this tangy, salty cheese. Cooking time around 20 minutes so pop round to your local Greek grocer and get some horn peppers and feta and that's more or less what you need.

Spinach pie is an excellent way to enjoy spinach, one of the healthiest of vegetables. Spinach contains vitamin C and is packed full of nutrients. I like it because it tastes great and I could eat it simply sauted with a drizzle of olive oil and lemon juice.

Here's a receipe for spinach pie, or spanakopita in Greek. Spanakopita is usally made into large pies that can be cut into slices to serving at lunch time or as an appetiser. Stuffed aubergineOK here's another eastern Mediterranean favorite: Papoutsakia (Little Shoes in Greece), Imam Bayildi (the Imam Fainted in Turkey), Sheikh el Mehshi (in Lebanon) or just plain stuffed aubergine (eggplant). This is more of a Greek recipe because i've reduced the amount of olive oil and use feta cheese as a topping.

Feta cheese is a salted brined curd cheese made from sheep and goat's milk in Greece, Bulgaria and Turkey. I tend not to add salt to this dish as it is salty enough already.

The cucumbers are the small gherkin type field cucumbers found in Cyprus which are usually harder and tastier than the long wide ones grown in greenhouses.
