Feta baked with tomato

 

A simple and delicious dish made with feta cheese and tomato. You can serve this as a snack or as part of a meze.

Feta cheese is a salted brined curd cheese made from sheep and goat's milk in Greece, Bulgaria and Turkey. I tend not to add salt to this dish as it is salty enough already.

 

 

 

 


Serves: 1
Cooking time: 20 mins.

Ingredients

  • 1 slice of feta (approx 125g)
  • 1 tomato
  • olive oil
  • pesto or oregano (optional)
  • freshly ground black pepper

Preparation

Cut about 30cm square of foil paper and drip some olive oil in the centre. Cut the tomato in thick slices and position over the oil. Slice the feta cheese in two and place on the tomatoes.

At this point you can add oregano and fresh ground black pepper to the top or pesto.

Bake in the oven at 200 degrees centigrade for approximately 15 minutes.

Remove the dish from the foil with a spatula and place in the serving dish. Drizzle a little olive over the top and serve with warm bread.
