Feta baked with onion and pepper

Greek Village Salad

This is a similar receipe to feta baked with tomato. Try this variation if you want a slightly more substantial snack.

Cooking time: 25 mins.

Ingredients

  • 1 slice of feta (approx 125g)
  • 1 bell pepper (capsicum, paprika)
  • 1 small onion
  • olive oil
  • pesto (optional) or oregano
  • freshly ground black pepper

Preparation

Cut about 30cm square of foil paper and drip some olive oil in the centre. Cut the onion into rings and position over the oil. Next add a layer of bell pepper cut into strips. Slice the feta cheese in two and place on the top. You can top this with a slice of tomato.

Add oregano and fresh ground black pepper to the top or you can use pesto if you prefer.

Bake in the oven at 200 degrees centigrade for approximately 15 to 20 minutes.

Remove the dish from the foil with a spatula and place in the serving dish. Drizzle a little olive over the top and serve with warm bread.
