A simple calamari dish that can be used in a meze or as a snack.



















Ingredients

  • 1Kg fresh or frozen squid cleaned and cut into rings
  • 1 cup of plain flour
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • Salt and pepper
  • Olive oil

Preparation

In a large bowl, mix the flour with paprika and cayenne pepper and add a fair amount of salt and ground black pepper. Heat about an inch of olive or other oil in a deep frying pan. Toss calamari into the flour mixture and coat liberally. Shake off excess flour and place the calamari into the frying pan and fry until golden. Cook in batches of 3 or 4 depending on the size of the pan.

Serve with lemon wedges and dips of your choice. A good choice is aioli
