Calamari Con Pomodoro

A simple calamari dish that you can serve with pasta



















Ingredients (serves 4)

  • 500g fresh or frozen squid cleaned and cut into strips
  • 1 small onion
  • 2 cloves of garlic
  • 4 tbs of olive oil
  • 1 tbs chopped parsley
  • 2 cups of finely chopped tomatoes
  • 1/2 cup of red wine
  • salt and pepper to taste

Preparation

Saute the calamari in olive oil for about 10 minutes and then leave to one side. Fry onions in the same pan until soft and then add garlic and cook for a further 5 mins. Add tomatoes and cook until tomatoes start to dissolve. Add the wine, salt and pepper and simmer for a further 5 minutes. Add calamari and simmer for 20 minutes

Serve with pasta of your choice
