Hummus with Tahini PDF Print E-mail
AfeliaHummus is eaten all over the the eastern meditteraean region as an appetizer with bread or in a meze. Its main ingredient is chick peas which have a mellow aromatic buttery flavour.


Ingredients

  • 1 cup of chick peas
  • 3 cups of water
  • 1/3 cup of tahini
  • 1/2 cup lemon juice
  • 2 cloves of crushed garlic
  • salt

 

Preparation

Wash the chick peas and cover with water to soak overnight.

Boil the chick peas in there water for 2 hours, add salt and boil for a further 1 hour adding additional water if necessary. Drain the peas and save some of the water for later.

Press the peas and add some water left over from cooking to keep the mixture moist.

Add tahini and lemon to the peas and blend to a paste.

Crush the garlic with a little salt and add to the mixture with additional lemon as required. Pour into a serving dish and add olive oil to the centre and garnish with chopped parley and a little paprika or cayenne pepper.
