Tabbouleh - Bulgur wheat and parsley salad PDF Print E-mail

TaboulehTabbouleh is a traditional Syrian Arab salad served with a meze or as a side to meat dishes. The bulgur wheat used in its preparation is high in fiber, vitamins and minerals.

 

Ingredients (serves 6-8)

  • 130g bulgur wheat
  • 2 cups of chopped parsley
  • 2 large spring onions
  • 1/2 chopped mint
  • 1/4 cup of olive oil
  • juice of 1 lemon
  • 2 firm tomatoes
  • salt and pepper to your taste

Preparation

The bulgur wheat should be washed in a fine sieve and then left to soak in cold water for 30minutes. Using hot water reduces this time. Once ready, drain with a sieve and spread out to dry on a clean teatowel.

The parley should be washed, thick stalks removed and wrapped in a clean teatowel allowed to dry in the fridge for a few minutes.

Place the burgul in a large bowl and add the chopped spring onion and mix it through.

Chop parsley and mint and add to the bowl.

The lemon juice, olive oil , salt and pepper are beaten together and then added to the bowl. The contents should now be mixed thoroughly and left in the fridge before serving.
