A simply delicious way to make finger food for parties etc or a great appetizer is to make chicken satays. This recipe uses a teriyaki marinade for a tastier flavour and yummy glazed look to the satays. The Sauce is a peanut butter satay sauce.
Serves: 3/4 Cooking time: 35 mins plus 1 hr marinade.
Ingredients
Satay Sauce
- 1 medium onion finely chopped
- 1 ripe tomato finely chopped (you can remove the skin by blanching first if you prefer)
- 1 clove garlic (minced/finely chopped)
- 1 tbsp olive oil
- 3 tbsp smooth peanut butter
- 1/2 cup water
- Salt & Pepper
Preparation
Cut chicken breasts into long 2 -3xm wide strips. Using a tenderizer lightly pound the chicken strips individually to flatten them a little bit. Place in the teriyaki marinade for 1 hour (or as long as you like in the fridge). The recipe for teriyaki marinade is found here

When ready, skewer the chicken strips onto wooden skewers by first wetting the skewer with a little olive oil and then running it through the length of each chicken strip.
Grill on a charcoal or gas grill slowly until brown (around 25 minutes).
Satay Sauce
Lightly fry the onion in olive oil until soft. Add garlic and fry gently a little longer. Add chopped tomato and fry gently until the tomato starts to dissolve (add more oil if necessary). Add peanut butter and mix in well while gently cooking. Add the water to the mix gradually to get a thick sauce. You can make the sauce slightly spicy by adding a pinch of chile powder.
The sauce can be served in individual 'dip' bowls with each serving of satay. |
