Pan-fried salmon steakSalmon is a fantastic, tasty and nutritious fish that is super easy to cook. You can pan-fry it, broil it, grill it or just chase it upstream. The thing that distinguishes any salmon recipe is the sauce. My favorite flavours that go with salmon are lemon & dill so that makes this my favorite sauce for salmon






Ingredients (serves 2)

  • 2 choice cuts of salmon steak
  • 2 tbsp mayonnaise
  • 2 tbsp chopped fresh dill
  • 1 tsp mustard powder
  • Juice of 1/2 a lemon
  • 1 drip of olive oil
  • salt and pepper

Preparation

Before cooking the fish make the sauce. In a mixing jug place the mayonaise, dill, lemon etc and beat briskly. I like to add a little olive oil as it adds a little mediterranean flavour to the sauce. Leave it in the fridge while you prepare some vegetables and the fish.

To pan-fry salmon place 2 tbsp of olive in a non-stick pan. Heat the oil and before it starts to smoke add the fish. Sprinkle freshly milled pepper and fry for 4 or 5 minutes on each side (depending on the width of the portion).

Serve with vegetables of your choice and drizzle (or pour) the sauce over the fish. Fresh sprig of dill makes a good garnish
