Ginger lemon pasta

Ginger lemon pastaThis is my favourite single night dinner. Single because of the garlic and favourite because it’s really light and refreshing and it’s the healthiest pasta dish I know, so I still can eat some ice cream afterwards without having bad conscience.


The ginger goes both with lemon or lime so I use whatever I find first. It’s ready in less than 20 minutes. It’s so refreshing that if you use bow tie pasta, and serve cold, you can serve it as salad and it’s also ideal for parties.

Usually I prepare the ginger-garlic-parsley paste in advance and put it in the freezer in small balls, for 3-5 portions. So when I go home in the

evening I just take out a small ball and throw it in the pan while cooking the pasta.

 

 

Ingredients

  • a small piece of ginger
  • a small piece of garlic
  • parsley
  • olive oil, salt , pepper
  • the juice and the skin of a lemon or lime
  • spring onion
  • pasta 

I almost always use pasta made of whole meal flour. While I boil the water for the pasta, I put the garlic, the ginger, the parsley, some olive oil with the salt and pepper in the chopper and prepare the paste. When the pasta is ready, I heat some oil in the pan, add one big tablespoon of paste per person and fry it for one or two minutes. I add the pasta and mix it well. At last I put the juice of a lime or a lemon and its skin, and some spring onion on top… goes with white wine and sex and the city…

Hi Crystal,

It depends how hot you like it. I didnt write measurements on purpose. I usually use pasta for 1 person (single night dinner so the above measurements are meant for 1 person. But you have to experiment with the right amount
