Aspargus fried with egg

 


Asparagus grows wild all over Cyprus during the spring and shops and market stalls start selling bunches of fresh asparagus at this time. Here's a quick and simple way to sample asparagus either wild or cultivated.












Ingredients

  • 1 Bunch of asparagus
  • Olive oil
  • 1 Egg


Preparation

You should only use the upper softer part of an asparagus. The lower half is woody and will not cook well or taste good. The way to cut the good part of an asparagus spear is to hold the spear with both hands and bend it until it snaps. The top part is the part to use.

Fry the asparagus lightly in olive oil for about 10 minutes until soft. Break an egg directly into the pan and stir continuosly until it mixes well with the asparagus. Allow to cook on low heat for a further 5 minutes stiring occasionally. Serve as a side dish or quick snack.
